Chocolate  Chip Cookies

Now that our hens are back on lay at the allotment I’m back in baking mode, everything tastes better with fresh free ranging eggs.

Preheat oven to 180

125g unsalted butter

115g brown sugar

120g caster sugar

1 egg

220g self raising flour

200g chocolate chips

Line 2 trays with baking paper

Cream together butter and sugar then add the egg and mix well

Stir in the flour then the chocolate chips

Break off walnut size pieces, roll in a ball and place on baking tray with space between

Cook for 7-9 minutes, allow to cool and enjoy๐Ÿ˜‹

Best brownies ever!

The courgettes were hand picked and the eggs laid this morning, you couldn’t get much fresher! I now need to resist the urge to eat it all!

Rocky Road

The perfect sweet treat!

When I say a sweet treat I mean very sweet, I could almost feel my teeth dissolving as I was eating it! During lockdown cupboards have been cleaned more than ever and sorting out my baking shelf encouraged me to use some of the left overs. Rocky road is perfect for this as you can add anything you fancy.

This one always goes down well for cake sales at work, one thing though if you are going to give a bit to children, make sure it is as they leave as the amount of sugar in it will have them hyper!

Wild garlic and cheddar cheese scones

Theres nothing like a woodland walk in spring, nature’s larder is declared open. I love wild garlic and cant resist the chance to pick it and use it.

I usually add mixed herbs to my cheese scones but adding wild garlic is a whole new taste dimension! Its lovely and not overpowering either.

Here is my usual recipe, but I swap herbs for a few leaves of chopped garlic:

Ingredients:

175 g Self Raising Flour

teaspoon finely chopped wild garlic

25 g margarine

75 g cheese, grated

1 egg

2 tablespoons milk

Method:

Heat oven to 220ยบC and grease a baking tray.

Rub together flour and margarine. Stir in cheese and garlic.

Mix to a soft dough with the egg and milk, save a little for glazing.

Roll out and cut out the scones. Place on the baking tray and brush with egg and milk and sprinkle with cheese.

cook for 12 minutes

Crusty White Bread ๐Ÿž

I’ve tried making bread a few times but it’s never really worked, I think it’s down to the kneading. I decided to treat the hubby to Moules Mariniere and thought bread would be nice to mop up the sauce so I gave it another try. It worked! A lovely crusty loaf using the below recipe. ๐Ÿž

Chicken Pie

Following the lovely lot of veg I had delivered I made a huge pot of Chicken Stew, I made 6 portions and still had some left. I thickened up the stew with some corn flour, made the Pastry and there you go, Chicken Pie!

There was filling left over and pastry, so the hubby got a massive pasty too!

Yorkshire Pudding Sandwiches

I love Sunday lunch and always make too much, too many puddings on purpose for snacks later!

There’s nothing better than the left over meat and stuffing being put in the middle of the pudding – Yorkshire pudding sandwiches!

Crunchy crackling and perfect puddings!ย 

Life gets busy and sometimes it’s a while before the family can get together.  Shift work can be a pain to arrange things so we’ve had a date in the diary for a few months for Sunday Lunch together today.

My sister has just finished studying for a degree around work and was proudly  accredited a first class honours.  Prosecco was the first part of lunch today as celebration followed by a roast pork dinner. 

Amazing meat from my local butcher and his jumbo eggs made the perfect puddings! Great family time. 

Herby Cheese Scones

An afternoon off work and a beef in ale stew in the slow cooker, what else to do than knock up a batch of cheese scones? I like to add a few mixed herbs in for extra flavour or wild garlic when it’s in season.

These will go in the slow cooker about 15 minutes before serving to make a nice beef cobbler!

Yorkshire Puds!ย 

I’ve struggled with my Yorkshire Puddings of late, ever since I changed my oven.  I thought it wasn’t getting hot enough as they just weren’t rising. I changed from a bun tin to a muffin tin which was slightly better but still not great so I decided to try a different recipe.  Bye bye be-ro, hello James Martin! And look what happened….๐Ÿ˜€

Ingredients:

3 eggs

200g plain flour

300ml milk

Method:

Heat oven to 240c

Dribble a little oil in the muffin tin and heat in the oven til hot

Whisk eggs four and milk together to form a batter and pour in the hot tins for 20 minutes
