Chocolate  Chip Cookies

Now that our hens are back on lay at the allotment I’m back in baking mode, everything tastes better with fresh free ranging eggs.

Preheat oven to 180

125g unsalted butter

115g brown sugar

120g caster sugar

1 egg

220g self raising flour

200g chocolate chips

Line 2 trays with baking paper

Cream together butter and sugar then add the egg and mix well

Stir in the flour then the chocolate chips

Break off walnut size pieces, roll in a ball and place on baking tray with space between

Cook for 7-9 minutes, allow to cool and enjoy๐Ÿ˜‹

Roasted BBQ chickpeas

I finally succumbed to the hype of the air fryer. After much deliberation, I opted for the Ninja Foodi dual zone so I wanted to try out a few things I’d seen on line. Typically I couldn’t find the recipe I had previously seen so I winged it!

The Ninja has landed!

I opened and rinsed a can of chickpeas then dried them and added to a bowl with a drizzle of oil and a sprinkling of BBQ seasoning and salt, 10 minutes on air fry and 4 minutes on max crisp and they were done! The perfect high protein, low fat snack. I can’t wait to experiment with more flavours now!

Spicy Pickled Radish

With the allotment flourishing this year we wanted to make the most of the produce and follow the ethos of Michelin starred Chef Tommy Banks. Preserving food for the hunger gap throughout winter using the goodies you have in spring and summer. We also make a hamper for family Christmas gifts using a selection of our preserves, it seems to be a hit too!

Prosciutto-wrapped chicken & leek terrine

Preparations for Christmas are thoroughly underway in the HungryHydeHousehold, we have the gravy made and frozen, carrots prepped and frozen, now we need to practice the starter.

We have fancied making a terrine for a while but never got round to it until I found This recipe . I even spiced the pears although I didnโ€™t have the micro herbs to decorate it, I was very happy with presentation!

Charcuterie and cheese board ๐Ÿง€ ๐Ÿ–

I love a good cheese board and I love cold meats, put them together with accompaniments of fruit, chutney and crusty bread, I’m in heaven!

I recently popped I to a newish gin bar in Durham and the only food on the menu was a cheese board or a charcuterie board, so I ordered both, to share with Mr H of course! It was amazing so I decided to try and recreate it at home. I used home made chilli jam (which I’m yet to blog) and Cranberry and red onion relish to enhance it.

It was delicious ๐Ÿ˜‹

Cheese board ๐Ÿง€

I just love cheese! I love trying different flavours, it has been known that I spend a fortune at farmers markets and food festivals on cheese.

My recent test for how good a restaurant is would be to order the cheese and charcuterie board. So far the best is Old Tom’s Gin Bar in Durham City, if you are in the area, give it a try.

Cheese is the best course in a dinner without a doubt!

Wild garlic, roasted red pepper and feta muffins

With the local woodland being awash with wild garlic at the moment I’m trying as many recipes using wild garlic as I can.

This was very strong in garlic, I think I’d use half next time and increase the cooking time by 5 minutes.

Best beef burger ever! ๐Ÿ”

I know it’s often said that burgers are best with a mix of beef and pork mince, however, I prefer beef as it’s less fatty. I know burgers are cheap enough to buy but if I make my own I know exactly what’s in it and with a great local butcher I know where my meat is from too!

A good burger is so easy to make, I add an onion and mixed herbs to the minced beef and flatten them into patties and grill them, also using the healthier option of brown buns. This burger was less healthy with the addition of a fried egg, bacon and cheese. Although it did have tomato and lettuce!

Omlette

You know that feeling when you look in the fridge and there’s nothing there to eat, that! Look again, if you’ve got eggs, you’ve got a meal with bits and bobs from the fridge.

Mr Hyde loves a good omelette so my attitude is if it’s in the fridge it’s in the omelette! It always turns out great ๐Ÿ˜Š

Wild Mushroom Arancini

For a while I had been wanting to make arancini after trying it in a few restaurants. I made risotto the day before so it was cold to use. The middle I decided to use was the fabulous flavours of a fricasse of Wild mushrooms ๐Ÿ„ Making those was the easy bit!

Cold hands is a must to try and stop everything sticking to your fingers, trying to get golf ball sized arancini was nearly impossible! After rolling a ball sticking my finger in it to add the mushrooms then forming back into a ball was quite difficult but the messy bit was rolling it in flour, egg then breadcrumbs. I was covered!

I had the option of frying or cooking in the oven, so the oven won. I hate the smell of frying. They went in on 180 for 20 minutes and were absolutely amazing โค๏ธ
