Lemon Curd 🍋

It’s that time of year again, preparing for (dare I use the C word in November?) Christmas 🎄. I always make a home made hamper for my Mam and aunt, it looks great and costs very little, today I decided to make the lemon curd. Yummy!

Ingredients:

4 lemons

4 eggs

115g unsalted Butter

450g granulated sugar

Method:

Place the zest and juice of the lemons in a non metallic bowl, followed by the eggs butter and sugar.

Mix together over a pan of simmering water and stir until the sugar has dissolved.

Stir frequently for about half an hour, then pot into sterilised jars.

Chicken Parmo

There’s always a debate over who invented the parmo, in the north east the smoggies reckon they invented it in Middlesbrough. Personally I don’t care where it was invented I’m just happy it was!

Recently my local Parmesan house was closed for a time, and I tried others but they weren’t as nice. The original reopened with new owners and wasn’t great. I decided it can’t be that hard to make my own, so I gave it a go and it was a great success.

After whacking the chicken flat with a rolling pin, covering in egg then breadcrumbs it’s on a medium heat in a pan with oil, turned over after about 7 mins, cook another 7 minutes and let it drain on kitchen roll.

While it drains make the Bechemel sauce cover the chicken with it then smother with cheese and pop under a hot grill to melt the cheese. That’s it, chicken parmo!

I served it with chips, salad and garlic mushrooms. Yummy and cost loads less than a take away!
