Prosciutto-wrapped chicken & leek terrine

Preparations for Christmas are thoroughly underway in the HungryHydeHousehold, we have the gravy made and frozen, carrots prepped and frozen, now we need to practice the starter.

We have fancied making a terrine for a while but never got round to it until I found This recipe . I even spiced the pears although I didn’t have the micro herbs to decorate it, I was very happy with presentation!

Rhubarb Chutney

With the allotment flourishing this year we wanted to make the most of the produce and follow the ethos of Michelin starred Chef Tommy Banks. Preserving food for the hunger gap throughout winter using the goodies you have in spring and summer. We also make a hamper for family Christmas gifts using a selection of our preserves, it seems to be a hit too!

Rhubarb

Rhubarb was a gift that kept giving this year, we couldn’t use enough of it. Pinterest was a god send for different recipes to try to use up the produce.

I used This recipe for Rhubarb Chutney that Mr H says is the best Chutney ever. Praise indeed!

Christmas Gravy

I know it’s a little early for the C word, but it’s my turn to host this year and I like to get as much as possible done in advance. That’s if we can even have Christmas this year!

Roasting the veg and chicken

This gravy is even more special this year as most of the veg and herbs are from our allotment. 😃 It’s not a quick process so doing it in advance and freezing it ready for the big day is ideal.

Simmering away

I use Jamie Oliver’s ‘Get ahead gravy’ recipe from his Christmas book. It can be found here

The finished product

Home grown sprouts

We are now nearing the last of our home grown sprouts and I’d like to share our favourite sprout dish.

It’s perfect to go with a roast dinner or even Christmas dinner!

Fry off some smoked bacon Larson until they are really crispy then set them to one side (try not to nibble on them like I do!)

Clean up your sprouts and chop them in half then throw them in a wok. Add a couple of chopped garlic cloves, some chestnuts chopped in half and a couple of slugs of soy sauce.

Fry these for a couple of minutes and pop the bacon back in for a minute then serve with your favourite roast, it’s delicious! 😋

Stir fried sprouts!
